Smoked Ham

Preparation Time: 10-15 minutes Cooking/Baking Time: 2 1/2 hours

INGREDIENTS

1 whole (4500 g) SMOKED HAM (10 LBS), thawed in refrigerator for 12-24 hrs.
1 can pineapple slices ( 8 oz. can)
12 whole cloves
6 whole maraschino cherries, drained, cut in halves

METHOD

Preheat oven at 350°F /180°C.
Remove ham casing with a pair of kitchen shears. Wrap ham in aluminum foil.
Place ham, fat side up, on a rack in a shallow open pan, in the middle of oven, Allow 15 minutes for each lb / gram. Within the final 1/2 hour, decorate as follows:
Cut away rind (skin), make diagonal cuts 3 mm (1/8 ") deep and about 2.5 cm (1") across the entire fat of the ham. Repeat at all angles to make squares / diamonds.
Stud the top of the ham in pattern with whole cloves. Spoon over the strawberry passion glaze. Return to oven, complete cooking and give a nice glaze.
